New York cheesecake. Absolutely delicious, easy to make. Hi there YouTube friends. Welcome back to another episode of Auntie A’s kitchen. Simple and delicious food cooked and prepared in South Korea with South
Korean ingredients. If you are new to this channel ‘Hi’. Now today I have a
treat for you we are coming up to Chuseok. A great big
family celebration in Korea. So why not make a New York cheesecake. The hardest part of this is to leave it in the fridge overnight so that it can really
set. It is a delicious cake to serve for your family for Chuseok. One of the first things I prepare is a
nonstick quick-release tin. I like to line the bottom of the tin with baking
paper, this just makes it easier to remove from the base when I am ready to
serve. I make my base using digestive biscuits but you could use any cookie or
biscuit that you have available as long as it is crunchy. If you don’t have a mixer then just place the biscuits into a bag using a
rolling pin, smash them up until they are like bread crumbs. I melt some butter on
the stovetop but you could also use a microwave and I place this in with my
biscuit crumbs and then mix. I love this machine because it combines a food mixer and a processor together and makes baking a lot easier but if you don’t
have one just use a bowl and a spoon to mix your ingredients. Once your biscuits
and butter and mixed together it should look like wet sand. Empty this into your
baking tin. Evenly spread out your mixture. You want your base to be as
compact as possible. Use your hand or a kitchen tool or even a glass to flatten
your biscuit base into your tin. Once you have finished place your base into the
freezer while you prepare the other ingredients. I am using Philadelphia but
you could use any cream cheese you have available. I place a little of my cream
cheese into my mixing bowl with the sugar to mix. Once it is combined I then
add the rest of my cream cheese to mix until it becomes light and creamy.
Instead of sour cream I use yoghurt which I think works really well in this
New York cheesecake but if you have sour cream feel free to use it. Next I measure
out and pour some cream into my mixture while it is mixing. I use some vanilla
extract that you could also use vanilla powder. One of the last ingredients a
little bit of flour. I use some of the zest and juice of a lemon. I highly
recommend using organic lemons but if you don’t have one like me, just make
sure you wash your lemon well. After putting in the lemon juice and zest I
break two eggs into my mixture and allow this all to mix together. I like to do a final mix by hand
making sure I have all the ingredients from the sides of my mixing bowl, then I
pour this into my baking tin. I knock my tin gently on the counter a few times to
remove any air bubbles. The last thing I do is wrap foil around my tin then place
it into an oven proof dish full of water. I place this then into my preheated oven
for one hour. I cook for 30 minutes then reduce the temperature and cook for
another 30 minutes. Leave it in your oven for one hour to cool down or on the side
covered up before you put it in the refrigerator. I leave it in its tin
overnight in the refrigerator then the next day carefully remove it from the
baking tin. A simple way to remove your cheesecake is to place it glass under
your tin and allow the tin just to fall gently down. I remove the base which is easy because
we placed baking paper on the bottom, the last thing then to do is to peel that
baking paper off carefully. A secret to having the perfect slice of cheesecake
is to wipe your knife clean between every cut. So here it is a delicious, soft and
fluffy New York cheesecake, ready to wow! your family and friends. New York
cheesecake it’s got the colour on top absolutely creamy underneath every
mouthful as you can see here perfect with a crunchy base, soft top and the
colour, oh my gosh! it’s got that hit of lemon. A perfect treat to cook up for
Chuseok mmm… oh my! So simple to make at home and please stick around. The next
