Chef Inocencio Carbajal Is Chicago’s Carnitas King — No Passport Required with Marcus Samuelsson

– [Marcus] Carnitas is
like reaching pork heaven. First of all, they are simmered in fat. In French you would call it confit; they’re simmered for hours. When done right, it’s both juicy, crispy, crunchy, all at the same time. (slow hip hop music) – [Marcos] Your carnitas have arrived. – [Marcus] Looking good! – Fiesta. – [Marcus] Fiesta, exactly! – [Inocencio] Shoulder. He hungry. – Let’s eat. – So get a little bit
of the skin, cueritos, little bit of the shoulder in there. – [Marcus] I love the jelly part, that’s full of what gives the texture. – [Marcos] That fattiness,
there’s a lot of flavor, a little bit of the ribs. – [Marcus] I don’t think you
can eat better than this. – [Marcos] You’re digging
right in with your hands. I like this salsa with it. This salsa has lot of jalapenños
with the vinegar in it, so some of the acidity of the salsa cuts right through some of the
fattiness of the pork. Just juicy. – So beautiful. The way the meat is
prepared, not a ton of sauce, it’s the meat, all the
labor in the meat is there. I love it, it’s fantastic! – (laughs) – [Marcus] I have to ask,
we eat authentic Mexican food today because of
people like your father. So when he hears that in this climate, on national TV that
Mexicans, immigrants are bad, you must feel so bad for him. – Yeah. – There are times where
we’re not portrayed that way, and the focus is shifting
and looking at us in a different lens. But, you know, we’re here. – Contributing. – [Marcos] Contributing, yeah. – [Marcos] It’s an expression
for your business owners, that energy that you put out is exactly what comes right back in.

  8. Why bring up immigration? This is a food show! Bring up food items & cooking techniques, don't bring up immigration! I gave this episode a thumbs down because show host brought up immigration! If the show host didn't bring up immigration, I would have given a thumbs up. Don't bring up politics on a food show! I decided to watch food show for food NOT POLITICS. DON'T BRING UP POLITICS ON FOOD SHOWS! If Eater brings up politics on their food show again, I'm unsubscribing.

  9. Typical liberal trash reporting….as a son of an immigrant myself, nobody views Mexicans as 'bad'. We want this country to populated with people who are willing to follow the rules. We waited like we were supposed to, we paid our dues when it came time. We only hate ILLEGAL immigrants who break rules and don't want to wait their turns like the rest of us LEGAL immigrants.

  14. Why does everything get turned into politics. I have ancestors who are immigrants. I’m NOT for illegal immigration. I really don’t think people are against Mexicans or any migration to America. But there has to be order they need to come legally.

Everything was great but why did he come up with a question like that, reminding these amazing Mexican people that there are lots of people saying that immigrants are bad, just why? look at their faces, they got so uncomfortable… other than that, great to see Mexicans doing a great job over there in Chicago, keep up the good work!
